Menemen (Turkish scrambled eggs) Recipe

Menemen is a hearty Turkish scrambled egg dish with tomatoes, green peppers, feta, fresh dill and chilli flakes. This is perfect for breakfast or brunch, ideally served in a traditional Turkish copper egg pan and with some crusty bread on the side for dipping!
Ingredients (2-3 people)
4 eggs
2-3 large vine tomatoes (chopped and deseeded)
4 Turkish green peppers (chopped)
100g feta cheese (cut into small pieces)
1/2 tsp chilli flakes
Handful of fresh dill
Salt and pepper to taste
Olive oil
Preparation (15min)
1. Put olive oil in frying pan on medium heat.
2. Add tomatoes and peppers to pan. Fry for about 10min until soft and reduced.
3. Add eggs and break/stir them in to the tomatoes and peppers. Add feta, chilli flakes and dill. Stir until the eggs are cooked through but still slightly runny (2-3min).
4. Season with salt and pepper to taste. Serve.
TIP: Add some salt to the chopped tomatoes and leave for 5min to drain excess liquid. But be careful not to add too much salt at the end when seasoning.
